Easy Tofu In Oyster Sauce

This is a very easy tofu recipe....for those days when u need to make quick lunch or dinners..and tastes yummy, too :)

Ingredients :
3 firm, fresh tofu (diced)
1 onion
4 garlic cloves (minced)
1/2 inch ginger (cut into thin strips)
1 green chilli (or more if u prefer)
some chives (cut 1/2 inch long)
2 tbsps oyster sauce
1/2 tbsp light soya sauce
1/2 tsp dark soya sauce
salt (to taste)

Method :
Saute onion till soft, add in garlic, ginger and chopped green chillies - till fragrant.
Add tofu and chives. Mix well. Close with a lid and let it cook for a few minutes. Add in the sauces and salt and mix well. Let it cook till tofu is cooked. Dish it up and serve hot.

Zucchini and Walnut Bread Recipe

I found this recipe from 2010 issue of Holiday Baking....submitted by Rose Levy Beranbaum, the author of Rose's Heavenly Cakes...

Ingredients :

3/4 cup walnuts
2 cups plus 2 tbsp all purpose flour
2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1/3 cup instant oatmeal
1 ripe banana (mashed)
1/2 cup canola or sunflower oil
1/3 cup Muscovado sugar
1/3 cup granulated sugar
2 eggs (room temperature)
1/3 cup water
1 1/2 tsp vanilla extract
2/3 cup loosely packed green zucchini (grated)
1/3 cup loosely packed carrot (grated)

Method :

1. Spread the walnuts on a baking sheet and bake for about 7 mins at 180 degrees celcius. Stir once or twice for even browning. Take them out of the oven. Rub on a clean towel to remove the skin and coarsely break them to small pieces.
2. Coat an 8 1/2 x 4 1/2 inches loaf pan with baking spray.
3. Whisk together flour, baking powder, soda and salt in a medium bowl. Then sift them into another bowl. Add in the oatmeal.
4. In the bowl of a stand mixer with a whisk beater, mix together the banana, oil, brown sugar, granulated sugar and eggs on medium speed.
5. Reduce speed and gradually add water. Raise speed and beat for about 3 minutes. Reduce speed and add vanilla, the zucchini and carrots. Mix for about 10 minuted. It will be a bit foamy.
6. Add the flour mixture and beat till moistened and fully incorporated. Scrape down the sides of the bowl and add in walnuts. Beat for about 10 sec.
7. Scrape the batter into the prepared pan and smooth the surface.
8. Bake for 35-40 mins at 190 degrees celcius or until a toothpick inserted into the center comes out clean.
9. Cool bread on a wire rack for abt 10 minutes before removing it from the pan.

Zucchini and Walnut Bread

Yesterday I was home alone as my husband was working till 11 pm so I started baking....;)....tried out a new recipe : Zucchini Walnut Bread...and the whole house was smelling of newly baked cake...at 11pm !!I'm sure the neighbours would have wondered who's been baking in the middle of the night:)....anyway, it turned out really nice and moist...great for my breakfast this morning..Recipe and pics coming up soon ;)

Fresh Fruit Puff Recipe

Serves : 8


Ingredients :


1 package Philadelphia cream cheese
1 tbsp castor sugar (add if needed)
2 tsp orange zest
2 tbsp orange juice
2 cups strawberries (cut in halves)
2 kiwis, peeled and sliced
2 cups red and green grapes (cut in halves)
3 peach halves, sliced
2 tbsp honey


2 big sheets of puff pastry (I used Pampas)- cut into 4 squares each when u take out from freezer


Method :


Place pastry squares on non-stick metal baking trays or lined with baking paper. Fold over edges on all sides and press firmly with a fork. Prick the centre thoroughly with a fork. Bake for 17 minute or until golden brown at 200 degree celcius.


Meanwhile, mix together cream cheese, orange juice, zest and sugar till it forms a smooth mixture.


Once pastry is done, let it cool for about 10 minutes. then spread cheese mixture on pastry and arrange the fruits as desired. drizzle honey over the fruits for a glossy look :)


Serve immediately or leave in the fridge if ur gonna have it as dessert after dinner...ENJOY!

Fresh Fruit Puff



I was invited for dinner yesterday by my friends Davina and Yasmin, and I promised them i'll bring the dessert...so, I made these fruit puffs....it turned out wonderful and everyone loved it....good as a first attempt ;).....only took me an hour to make (made them after work)....thanks to my ever helpful husband, I had them done in time and reached their place before buka puasa time....

The only thing I changed was using just 1/2 cup of brown sugarfor the filling to reduce the sweetness...it was not an easy bread to do though....unless of coz ur a whiz in making breads...

Recipe for Baileys' Ice Cream Cake

Made some modifications for it to fit into my 9' springform pan....
Recipe :


150 gm softened butter
3/4 cups icing sugar
2 eggs
300 gm chopped milk chocolate
2/3 cup thickened cream
1 litre softened vanilla ice-cream (i used Nestle's)
300 gm sponge fingers (split into half)
enough Bailey's to dip sponge fingers


Method :


- Cream butter and sugar till whitish, add one egg at a time
- Microwave choc with cream on 1000 W for 2 mins or until melted, check and stir occasionally
- Add choc to butter mixture
- Line a springform cake tin, pour half the mixture, let it set a while
- Dip half sponge fingers in Bailey's and arrange on top of chocolate base
- Spoon half-melted ice-cream on top of fingers
- Layer it with the other half of Bailey's dipped sponge fingers but do not press it in
- Pour remaining choc and freeze it (covered tightly with cling wrap)
- Serve straight out of freezer (as this melts fast in room temperature)

I made Bailey's Ice Cream Cake for dessert yesterday and it turned out wonderful...best ice-cream cake ive ever tasted...yum yum...

Grilled Chicken with Coleslaw

I made this for dinner the other day using my new indoor electric grill...the chicken was tender and juicy,with caramalized onions on top...served it with coleslaw and garlic bread made from warmed sausage bun and garlic butter...soft and yummy......

The only thing lacking is sum gravy by the side...plan to attempt it again with sum gravy or black pepper sauce...

Dory Fillet in Lemon Butter Sauce with Potato Salad

Dory Fillet Recipe :
Ingredients:
  • 2 whole slices of cream dory fillet
  • 2 cups of bread crumbs
  • 1 egg, slightly beaten
  • 1 lemon (juice)
  • 3 tbsp melted butter
  • 6 tbsp mayo
  • 4 tbsp evaporated milk
  • Salt and pepper for seasoning
  • Cooking oil for pan frying

Procedure:

  • Season fish with salt and pepper on both sides
  • Dip fish in egg and coat it with bread crumbs
  • Heat cooking oil in a pan and fry fish
    Lemon Butter Sauce
  • Whisk together mayo, butter, juice of half the lemon, salt and pepper, and evaporated milk in a bowl
  • Heat sauce pan (low heat) and pour in the sauce mixture and bring to a simmer
  • Season with salt and pepper powder
  • Just before you serve the fish, pour sauce mixture over the fish
  Potato Salad :

Ingredients:

  • 2 medium potatoes (boiled and cubed)
  • 2 tbsp chopped yellow onion
  • 2 tbsp chopped green bell pepper
  • 3 tbsp chopped celery
  • 1/2 tablespoon butter or margarine
  • 1/3 cup sour cream
  • 1 tablespoons apple cider vinegar
  •  salt and pepper to taste

Preparation:

Cook potatoes until tender, Peel and scube. Meanwhile, in a large skillet onion, green pepper, celery in butter or margarine until tender. Take off heat and let it cool. Stir in sour cream, vinegar, salt, and pepper, potatoes and onion mixture in a large serving bowl. Serve potato salad right away or cold (as desired).
