Blueberry Muffins

Got this recipe from Gwyneth Paltrow's cookbook ; My Father's Daughter...delicious moist blueberry muffins....made slight modifications to it...



INGREDIENTS
1/2 cup unsalted butter, melted and cooled slightly
2 eggs
1/2 cup low fat milk
2 cups unbleached all-purpose flour
3/4 cup plus
2 teaspoons baking powder
1/2 teaspoon salt
200 gms fresh blueberries

METHOD
Heat oven to 180°.
Line a 12-cup muffin pan with paper liners.
Whisk butter, eggs and milk in a bowl.
Combine flour, 3/4 cup sugar, baking powder and salt in another bowl.
Stir wet ingredients into dry ingredients; fold in blueberries.
Divide batter evenly among muffin cups. Bake until muffins are golden brown and a knife comes out clean, 25 to 30 minutes. Serve warm.

I baked mine for 30 minutes as it was still light colored when I tried baking for 20 minutes…Guess it depends on your oven.

Chicken Kurma


Ingredients :

1/2 chicken (cut into desired sizes)
2 tomatoes(diced)
salt (to taste)
3 tbsp kurma powder
2 cups water
1 tsp kas kas powder

For frying :
1 big red onion
1 tsp aniseed (lightly pounded)
3 cloves
2 small pieces cinnamon
3 cardamons
2 star anise
few sprigs curry leaves
2 bay leaves

To grind :
1 big red onion (diced)
6 cloves garlic
1 1/2 inch ginger
2 green chillies (without seed)

Method :
Heat a big wok or pot and pour olive oil. Add frying ingredients and saute till fragrant. Add grinded ingredients and saute for about 3 minutes and add in chicken pieces and kurma powder. Mix well and add in water (add more kurma powder or water if needed to get desired curry consistency).Close with a lid and cook till chicken is slightly tender. Add in tomatoes, kas kas and salt. Mix well and cook till chicken is done.Serve hot with rice or chappati.

Indian Spiced Okra

This is a simple and easy dish...goes well with rice.

 



Ingredients:

300 gm okra
1 big red onion
4 cloves garlic (minced)
4-5 dried chillies (cut into 1 inch lengths)
few sprigs of curry leaves
1/2 tsp garam masala
3/4 tsp chilli powder (can be reduced)
1/4 tsp ground turmeric
1/2 tsp ground cumin
salt

Method :
Heat a non-stick pan and pour some olive oil.
Saute the onions, add dry chillies, curry leaves and garlic.
Once its fragrant, add in the okra and all the ground ingredients, salt.
Fry till okra is cooked and not sticky.
Dish out and serve hot.

Baked Banana Crumble

Baked Banana Crumble....it was an easy and delicious dessert to do especially when u plan to make it on a busy day....it only takes about 20 minutes to prepare....

Makes 2
Ingredients :

2 ripe medium sized bananas
1/3 cup orange juice (i used Peel Fresh)
1/2 tbsp vanilla essence or 1/2 tsp vanilla paste
1/2 cup all purpose flour
1/4 cup quick cooking oatmeal
1/3 cup molasses brown sugar
1/4 tsp ground cinnamon
1/4 tsp salt
3 tbsp cold butter

Method :
Combine orange juice and vanilla in cup.
Slice banana lengthwise and place cut side up in 2 buttered ramekins
Combine flour, sugar, cinnamon, oatmeal and salt in a bowl. Add butter and rub with fingers or using two knives until mixture resemble crumbles or small peas.
Drizzle banana with orange juice mixture.
Spoon crumble over the bananas and bake at 180 degrees for about 20 minutes
Serve warm :)

Romantic Dinner ;)

Yesterday's romantic surprise dinner for my hubby worked out just like I wanted it to...It's been sumtime since we both sat and had a quiet dinner...so, I made it special by preparing Pan Fried Spiced Dory with Potato Salad....and for dessert, i made a warm Baked Banana Crumble...and that made his day ;)

Oreo Cupcakes

Oreo Cupcakes

 

 

Ingredients :

1 1/2 cups all purpose flour

1/2 cup natural unsweetened cocoa

1 cup castor sugar

3/4 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

2 eggs

1/2 cup sunflower/ canola oil

1 tsp vanilla 

3/4 cup milk

3/4 cup hot water

20 oreo cookies


Method :

1. Preheat oven at 180 degrees celcius. Line tray with baking cups (medium size).

2. Place broken oreo cookie pieces in each cup.


3. Mix the flour, cocoa, sugar, salt, soda and baking powder in a bowl using a wire whisk.

4. Add eggs, oil, vanilla, milk and mix thoroughly. Add hot water and mix well.

5. Transfer batter into a large measuring cup and pour batter into each baking cup till about 3/4 full.

 

Bake for aBOUT 18-20 MINUTES

Makes about 15 cupcakes
