Ingredients :
3 eggs
8 dried chillies
5 cloves garlic
4 shallots
2 cm tamarind (dissolved in a little water)
a handful of anchovies
1 onion (cut into rings)
salt to taste
2 tsp sugar
Method :
1. Boil eggs and peel.
2. Soak dried chillies on hot water for about 20 minutes. Then grind together chillies, shallots and garlic.
3. Heat oil in a pan. Once oil is hot, fry the boiled eggs till golden brown and keep aside.
4. Fry the anchovies and keep aside.
5. Reduce oil and add in the ground ingredients. Fry till fragrant and add the onions and 1/2 cup water....Fry till oil separates and sauce thickens.
6. Add anchovies, tamarind juice, salt and sugar. Cook till a little dry. Dish it out onto the eggs. Ready to serve.
