Kung Pao Chicken

One of my husband's fav dish..made upon request ;)











U need :

2 chicken breast meat (cubed)
8-10 dried chillies
1 big onion, sliced
1 green capsicum, sliced
1/2 tsp corn flour mixed with 1 tbsp water and kept aside
cashewnuts, fried and kept aside

To marinate chicken:
1/2 beaten egg white
1/2 tbsp light soy sauce
some salt
1/2 tsp sugar

Mix marinate to chicken and leave it aside for 30 mins

For sauce :
1 tbsp oyster sauce
1tbsp light soy sauce
1/2 tbsp worchesteshire sauce
1/2 tsp dark soy sauce
1/2 tsp sesame oil
salt and sugar to taste

Mix sauces and keep aside

Method :

Shallow fry chicken pieces till golden and keep aside.
Heat oil in a non-stick pan. Fry dry chillies and onion till fragrant. Add capsicum..fry a little and add in chicken and sauces. Mix well till chicken well cooked. Add cornflour mixture and mix well to coat. Add  cashew nuts  and serve hot

Strawberry Mini Pot Pie

It's the time of the year again where we take a moment from our busy schedule to show the love of our lives how much they truly mean to us...and it's also time for some sinful sweet indulgence...
I saw many foodie events being organized by fellow bloggers in conjunction of Valentine's day and decided to bake something sweet, something 'red'....it's super easy yet impressive and of coz...delicious ;)

U need :

2 cups of strawberries- I used Korean strawberries, quartered
puff pastry sheets, thawed
1/4 cup brown sugar
2 tbsp orange juice
2 tbsp all purpose flour


Heat oven to 190 degrees celcius.
In a bowl, combine strawberries with brown sugar, orange juice and flour...
Cut out pastry sheets enough to fill 2 ramekins. Press pastry sheets into ramekins. Fill them with strawberry mixture. lastly cut out pastry sheet to make a criss- cross pattern and arrange them on the ramekins as shown in pic above.
Bake for about 20-25 mins..till golden...let it cool and serve with a scoop of ice cream...;)

Crispy Golden Fish Cutlets



These cutlets are crispy, delicious..eaten as a snack or with rice n curry ;)

You need :

2-3 slices of spanish mackerel (steamed, bones removed and mashed with a fork)
1 large onion (minced)
few cloves garlic (minced)
handful of coriander leaves (minced)
few sprigs curry leaves (sliced finely)
1/2 inch ginger (minced)
juice of 1 lime
salt to taste

Mix all above ingredients together and leave in refrigerator. When you are ready to serve, beat an egg with a pinch of salt in a bowl. In another plate, place breadcrumbs...Remove fish mixture from the refrigerator, make into desired shape, dip into egg and roll with breadcrumbs...heat oil in a frying pan...Place patties on hot oil and pan fry till golden and crispy...
