Nasi Tomato with Sambal Ayam

We had this for lunch today...its Tomato Rice with Spicy Chicken....done upon request from my husband :)....

Stir Fry Asparagus and Shitake Mushroom

This is an easy, colourful dish...for a quick dinner side dish....using baby asparagus....yummy

All you need :
A bunch of baby asparagus
a carrot
3 shittake mushroom (sliced)
1 onion (sliced)
3 cloves garlic (sliced thinly)
2 red chillies
a bit of glass noodles (soak in water)
salt to taste
oyster sauce

Heat a little canola oil in a non-stick pan and saute the onion, red chillies and garlic...Add the carrot..cook for a few minutes and add asparagus and mushrooms....once veggies are 3/4 cooked, add glass noodles, oyster sauce and salt...stir fry and serve with rice...

Spicy Tuna Pizza Sticks

I was at Jusco and got hold of a freshly baked Baguette from Delifrance.....they have the ones i love...crunchy outside, soft on the inside....so yesterday for dinner I had an idea of making a simple pizza like dish with it...
It was a quick, easy, simple yet delicious....worth the try....
Ingredients :
1 baguette (cut into 6 inch pieces and cut it open - refer to pic)
1 can of tomato chilli tuna from Ayam Brand
1 green capsicum (diced)
1 onion (sliced thinly)
mixed italian herbs
salt
low fat mozarella cheese
Method :
Prepare a baking pan with parchment paper...preheat oven 180 degrees celcius...

Arrange baguette pieces...spread the tuna...add capsicum and onion slices...Sprinkle with herbs and a little salt...Add mozarella on top and bake for about 10 mins....ready to serve ;)

Dragon Fruit Smoothie

Yummy, vibrant smoothie....found some fresh dragon fruits being sold outside a farm and couldn't resist buying a couple of em...

Remove the flesh from 1 fruit and slice to small pieces...Slice one ripe banana and put it all in a blender...add some ice cubes and 3/4 cup of water...blend it on high and it's ready to serve ;)

Mee Rebus

Yet another Malaysian dish....this uses yellow noddles...it's a gravy with noodles...slightly sweet and the lime gives such a woderful taste...i squeezed two in my dish and brought a burst of flavours...and u can get the original recipe from Anncoo Journal...
tips : use can also use sweet potatoes ...and blend the taucu paste before adding in....an easy version of malaysian mee rebus at this site...;)

Kottu Parratha

Hi...i was running out of ideas for a weeknight dinner...thinking maybe I should just make a curry and heat up some frozen parathas...and realized that I could do something different and made 'kottu paratha'....and even though it's my first time experimenting, turned out yummy and me and hubby enjoyed it while watching tv ;)


Ingredients :
Served 2

3 frozen parathas..(leave at room temperature for about 15 minutes)- cut into bite size pieces
1 large onion (sliced)
1/2 tsp mustard seeds
1 cup of sliced cabbage
1 carrot (grated)
4 cloves garlic (minced)
1 sprig of curry leaves
chilli powder (according to taste)
salt
2 eggs (beaten)

Heat oil and fry mustard seeds and curry leaves. Add sliced onions and garlic and fry till onions are slightly soft.
Add cabbage and carrot...cook a little and add chilli powder...fry for a few minues. Move everything to the sides of the pan and pour a little oil in the middle...pour beaten eggs...once eggs are half fried, scramble all ingredients together and add the paratha pieces and salt...
Fry till cooked and well coated.

Cheese Chapatti

Hi all...feeling a little adventurous today, I added cheddar cheese to my chapatti and wow....nice flavour...a deviation from the basic chapatti;)

Can u see the yellowish strips in the chapatti?..That's the shredded cheddar cheese....

I used 2 cups atta flour and water....make it into a non-sticky dough. Leave for about an hour...then make into balls, roll it a little, place cheddar cheese in the middle..make it into a ball, roll it again and cook on a hot tawa...Cheese Chapatti ready to serve...;)

Fried Beehoon

This is a Malaysian style fried beehoon I made for dinner....by far, this is the best tasting beehoon I've ever made and my husband truly enjoyed it ;)....Well, I'll be posting more Malaysian style dishes...so you can see a diversity of culture....For your info, Malaysians love spicy food.....especially curries and sambal.....Malaysia is a food heaven and a great place for food lovers as you can find anything and everything here.....that is one of the things I love about my country....;)

Fried Beehoon



Beehoon (enough for two persons - soaked till soft)
1 tofu (diced and fried lightly)
Mustard leaves (cut)
Beansprouts (a handful)
1 tbsp chilli paste ( I used store bought- u can make your own by grinding dry chillies)
1 big onion (sliced)
salt
1/2 tbsp dark soy sauce
1 tbsp light soy sauce

To grind :
4 shallots
1 tbsp taucu (fermented soybeans)
1 tbsp dried prawns
1 tsp anchovies granules- optional
4 cloves garlic

For garnishing;
2 fried eggs
some fried onions
onion leaves (diced)

Heat oil in a pan and fry chilli paste till oil separates slightly...Add sliced onions, and ground paste and fry till fragrant..make sure it does not stick to the pan...add a little more oil if needed....
Then add in the tofu, greens, beansprouts,some salt and all the sauces...mix well and add in the beehoon....mix till well combined...taste and add salt if needed...and serve hot, garnished with fried eggs, fried shallots and onion leaves...

Bake Along Challenge

Hi all....I am introducing a new challenge here where we bake together each month...sounds interesting?..Well, in this new challenge, a recipe will be chosen each month and sent to your mailbox...and all you have to do is bake and post ur goodies :)...This challenge starts next month so all those who are interested to join in, do place a comment on this post and your email add so a recipe will be sent to you by the end of the first week each month....You have to bake according to the recipe and link it to the host's page....

Sweet and Sour Fish

This is one easy fish recipe and my husband's favorite....easy as I can make it for a weekday dinner....after work ;)

For the fish :
3 slices of spanish mackerel (u can use any other fish slices)
1 egg (beaten)
salt
oil

Dip fish slices in egg and fry till slightly golden and cooked but make sure nor to over fry it. Keep aside in a serving bowl.

For the sauce:
1 yellow onion (sliced thinly)
1 1/2 inch ginger (sliced thinly)
4 cloves garlic (sliced thinly)
4 tbsp tomato sauce
2 tbsp chilli sauce
3/4 tsp dark soy sauce (depends on the colour you want)
2 tbsp oyster sauce
2 tomatoes (sliced thinly)
water
salt

Heat oil and fry onions, ginger and garlic till aromatic. Add all the sauces, tomatoes and enough water, let it boil...add salt.....cook till sauce becomes a little thick and to your liking....amount of sauces and water can be modified according to taste and serving.....taste along the way and make adjustments till you hit the right notes ;).....pour over fish slices and let it sit for a while before serving (so that the fish absorbs a little of the flavours)

Vanilla Custard Tart

A weekend bake....wanted to try this yummy looking tart that I came by while browsing randomly some time ago...and when I at last found a loose base pie pan, I managed to do it ;)....it took a few hours for it to be completed as there were many steps bt it was truly worth it.....the original recipe can be found at messy witchen ...a wonderful site worth visiting....



Some tips from me :
- use a good quality pure vanilla paste or extract...
- i added 15gm custard powder to the custard mixture
- make sure not to roll out the pastry too thin (it will not have a good base)

- the custard was a little soft to touch even after cooling down and leaving it in the fridge so I put it in the freezer for about 30 mins and it turned out better....(but if yours set nicely,you dun have to do this)...
- u may add some fruits on top of it or to serve with bt I wanted a true vanilla taste
- try experimenting it...worth it ;)

Tea Time Scones

Teatime Scones :)
sorry abt the crumbs in the pic ...couldnt resist having one before taking a shot ;)
u need :
250gm plain flour (or low protein flour from baking shops)
50gm castor sugar
1 tbsp b.powder
1 tsp salt
40gm cold butter
1 egg (lighly beaten)
180 ml cream
1 tbsp cream and 1 tbsp sugar for brushing

Whipped cream to serve: - whip all ingredients together
120 ml whipping cream
1/2 tsp vanilla essence
2 tbsp sugar

Preheat Oven 180degrees celcius
Combine flour, sugar, b.powder and salt.
Cut in the butter to the dry ingredients and combine with a fork or using fingers (until just combined- not melted)
Whisk egg into cream. Make a well in the centre of dry ingredients and pour the cream mixture. Fold mixture gently about 8-9 folds until ingredients just stick together.
Dust worktop with flour. take out dough and pat out to a thickness of 1 to 1/2 inches and cut into rounds with a round cutter.

Place rounds on a greased tray. Brush tops with cream and sprinkle a little sugar. Bake about 15 mins or golden brown. Serve with whipped cream and strawberry jam .
