Goan Salmon Curry

 Ingredients :
500 gm salmon fillet (chopped)
1/4 tsp salt
1/4 tsp turmeric powder
1/4 tsp cayenne pepper

Marinate salmon with the above mentioned ingredients and leave it covered in the fridge for an hour.

Curry Sauce :
1 tbsp veg oil
1/2 tsp mustard seeds
1/2 tsp fennel seeds
1 tbsp ground coriander
1 tsp ground cumin
1/4 tsp ground turmeric
1-2 tbsp fish curry powder
2 tomatoes (chopped)
150 ml water
2 sprigs curry leaves
1/2 tbsp brown sugar

Heat oil in a pan and add mustard seeds, cook till it pops..Add fennel seeds, ground coriander, cumin, turmeric and fish curry powder, cayenne pepper and fry in oil about a minute...
Add 2/3 of the tomatoes and water. ..If curry is too thick, add more water and if it's too thin, add more curry powder...Cover and let it boil in high for about 10 mins or till it thickens...Add in the sugar.
Add the salmon pieces in a single layer, cook over medium fire for about 5 mins or till salmon is cooked to your liking..Add salt to taste and the remaining tomatoes. Mix well and take it off fire. Serve with basmathi rice....
I served it with basmathi rice and potatoes with spinach.....
