Potatoes with Spinach

A simple and easy weeknight dinner dish that goes well with rice.....


Ingredients :

1/2 kg baby potatoes (cut into halves)
1 tbsp veg oil
1 tsp mustard seeds
1 tsp cumin seeds
4 cloves garlic (crushed)
1 big bunch of spinach (use the leaves with little stems - rinse well)
salt
coarsely ground black pepper

Method :
Boil potatoes till tender (about 20 mins)
Heat oil in a non-stick pan....Add drained potatoes and fry till slightly browned (abt 10 mins or so)
Add mustard seeds, stirring for about 30 sec. Add cumin seeds and garlic. Saute for about 5 minutes and remove potatoes from pan.
In the same pan, add the spinach and cook covered, stirring occasionally till spinach is wilted. Add in the potatoes, salt and coarsely ground black pepper. Stir well and remove from heat.
Serve hot with rice....
